These chocolate strawberry protein muffins are the real deal

With Valentine’s Day around the corner, I thought it would be perfect to try out something new on the classic chocolate & strawberry duo. Over the past weekend, while we were doing our normal Sunday shopping for the week, I came across a fresh strawberry sale. Questioning how they were going to taste for this time of year, yet just wanting any taste of spring that I could get my hands on – we loaded up the cart!

Monday morning rolled around and slightly to our surprise, the strawberries were perfectly ripened and delicious. And good thing because we had a fridge full! I couldn’t help but think how much better they would be coated in chocolate. (Yes, this goes through my head at 8 a.m.) Well low and behold, I found a way to make everyone happy – meaning myself and my weekday diet, of course.

One of our favorite special weekend traditions is making a nice big breakfast with cheesy eggs, turkey sausage, and pancakes! But not with just any pancakes, taaaa daaa – Kodiak Cakes Power Cakes! I’m sure many of you have seen these floating around the gram every now and again but they are seriously make the best (healthy-ish) pancakes. Per serving, which makes roughly 4 pancakes, you are getting 5 grams of fiber and 14 grams of protein! Not to sound overly excited but YES POWER CAKES, YES! Not to mention their ingredients list is pretty stellar.

With this gem in our pantry – it was time to get creative! Pinterest had only a handful of recipes using Kodiak in muffin-type recipes, and much to my surprise because of their stats. And much much to my surprise, they had a muffin recipe right on the box! It doesn’t get much easier than that. But you all know me too well to know that we can’t have dessert for breakfast every morning. Well…. no Hanna no. I did end up changing the recipe a bit, both adding and taking out a few things but – I kept my base (mix) the same as what they recommended.

Let’s Do This!

Ingredients List: 2 scoops Kodiak Pancake Mix (they do make a GF option!), 1 and 1/2 scoops of chocolate whey protein, 2 tbsp. unsweetened cocoa powder • 1 egg, 1 cup of milk (I used 1%, totally your preference), 2 tbsp. raw natural honey, and 1 heaping cup of diced strawberries

How It’s Done: (Preheat your oven to 350° F) Add all of your ingredients into a large bowl, I like starting with all of my dry ingredients before mixing in the wet. Combine the pancake mix, whey, and cocoa evenly – breaking up any lumps that you might have. Next, add in your egg, cup of milk, and honey. Mix it until you reach a nice batter-like consistency. Now you want to fold in your strawberry cubes – be sure not to stir so much that they become completely saturated and flimsy.

Fill a cupcake lined tin with the batter and top with an extra strawberry slice! Bake for around 12-15 minutes until your muffins are nice and full! You will start to hear sizzling from your strawberry juice but they might not be completely cooked. I let mine bake for a whole 15 minutes (I do have an older oven) and they were perfect!

  • Serving Size: 1 Muffin, 115 Calories 17 grams of protein, 13 grams of carbohydrate (3 grams of fiber), and less than 2 grams of fat
