Hello March!

I feel like it’s been a while since I’ve taken the time to update you all and just talk about whats been going on. I guess the last time would have been when we moved the site, which was about a month ago!  I can’t believe how quickly time passes. And speaking of,  I scheduled my last year of college on Friday morning and received a notification on WP for my 2 year anniversary – crazy.

This upcoming week is our spring break and I could not be more excited to have some time off and get back to my regular posting. I have so many plans and I can’t wait to share them with you! I decided not to take any classes over the summer so I could really focus on the blog and see where it takes me. I’m thinking about doing more video posts/vlogging ? I have to not be such a chicken first though.


 

This past weekend was filled, and I mean filled, with food

My dad took us out on Friday night to a local restaurant, Whitefire. It’s hard to find a seat on a Friday night that doesn’t have a wait – but luckily he goes there way too much (like first name basis with the owner too much lol).  Originally thinking we were getting steaks, Chad ended up ordering a bacon wrapped, BBQ meatloaf topped with homemade mashed potatoes, and I ordered a balsamic glazed salmon rice bowl (so boring compared to his).

It was brought out on the cutest cast iron (#presentationenvy) and tasted like it was sent from the heavens (#yassssmeatloaf)

We definitely did not go to bed hungry!

Saturday night was a nice little date night and much needed time to unplug. We really went all out and got our favorite – Hot Heads. Why not have a cheap to date night y’all?! It was exactly what we needed after Friday nights dinner. And we had a coupon – so I got a full scoop of guac, because it is that extra.

{ My Order: Rice bowl with chicken, fajita veggies, squash, corn, black beans, roja salsa, and of course guacamole – around 600 calories, 33 grams of protein, 71 grams of carbs 11 grams of fiber, and 20 grams of fat  }

We also picked up a few new Kombucha(s) on Saturday, which both were pretty tasty! If you don’t know what Kombucha is or even how to say it, it is a fermented tea that contains antioxidants and probiotics (good for the gut bacteria) – and is pronounced com-buch-a.

We sell the Kevita’s where I work, so I love being able to try new flavors. But I don’t love the amount of sugar in them. While I was at Target, I picked up some of the GT’s which have a third of the amount of sugar and I surprisingly like so much better. Plus this cranberry flavor was probably the best I’ve had!

      

Sunday was my youngest sisters birthday, and my mom happens to be the queen of throwing dinner parties. I suppose thats where my love for food presentation comes from! For as long as I can remember, my mom has always managed a killer appetizer table, with anything you could ever want. And I don’t just mean for holidays and birthdays, this is like a regular thing for her! If you aren’t full by the time dinners done, are you even at your moms?!

She had everything from aged cheddar and flax seed crackers, fresh sausage, Spanakopita (my favorite), hummus, and a huge veggie tray. { Also where I get my love for healthy snacking }

If you follow me on Instagram, then you probably saw my beer bread recipe! I love bringing something to the table, quite literally, and I thought beer bread would be a perfect combo with her ribs. Not to mention it’s super easy to make and fills your house with the sweetest aroma!

{ Beer Bread Recipe: 3 cups AP flour, 1 and 1/2 tablespoon of baking soda, 1/2 teaspoon of salt, 1/4 cup light brown sugar, and 1 lager of your choice – I used Great Lakes Dortmunder Gold – Bake for 1 hour at 375º }

And like I said, if you aren’t full by dinner..

The night ended with Sara in a blow up dinosaur costume roaming the neighborhood, stomach cramps from laughing so hard, and some very full bellies! I guess both parent wanted to make sure we didn’t go to bed hungry! This weekend was another crazy busy one to add to the books. I felt like that was the theme for most of February, but I wouldn’t mind if March slowed down just a tad.

It’s Monday morning and a great day to plan for an even better week. If you had a food-filled weekend like us, what are you doing to get back to routine??

  1. Everything looks so good!! We visited our parents and I can say that I don’t think that they feel like their jobs are done unless we are completely full! Great post!
