It’s all about the subtle sweetness, crunchy chunks, and healthy benefits that makes me love granola as much as I do! Lately I’ve been obsessing over the entire Purely Elizabeth line, and cannot seem to keep her granola in my pantry for more than two days – it’s that good. Her granola is actually the only store bought granola I’ve found to be worth buying, nutrition wise. Of course there are plenty of cheaper alternatives, but Purely Elizabeth uses some really great ingredients and natural sugars for sweetness.

Inspired, and fresh out of granola (again), I decided to whip up my own super healthy recipe and add a delicious twist – blueberries! Blueberries are said to be one of the best foods for you. They have a ton of vitamins and minerals, as well as antioxidants and prebiotic fiber to keep you feeling your best!

This granola is the perfect breakfast, topping, or snack for any day of the week. It is a great source of healthy carbohydrates and fats, natural proteins, and antioxidants. Not only is it going to keep you feeling fuller longer, but it’s not going to leave you feeling tired and foggy like a sugary cereal or store bought granola would. The natural sweetness from the honey, nutty almonds, and tart blueberries work together perfectly and I hope you enjoy it as much as I did!

Blueberry Almond Granola

What You Will Need

  • 2 cups of rolled oats *GF if necessary, 1/2 cup roughly chopped almonds, 1/4 cup chia seeds, 2 tbsp. flax seeds, and 1 cup fresh blueberries
  • 1/2 cup honey, 1 and 1/2 tbsp. unrefined coconut oil, and 1 tbsp. natural peanut butter *Any nut butter will work!

For your granola base, combine the oats, almonds, chia & flax seeds, and blueberries in a large mixing bowl. If you want to add/subtract any other healthy dry ingredients, feel free to do that now

In a separate bowl, bring together your honey, coconut oil, and natural peanut butter for the bind. Heat on high for 10-15 seconds until the coconut oil is completely translucent and liquified. Stir well before adding this to your base

Gently pour your bind over your base and slowly fold together. Be sure not to mix or stir causing your blueberries to get squished! You want to keep these in tact for the baking process

Once your granola is well combined, evenly spread the granola on a parchment lined baking sheet and bake at 350°F for 10-15 minutes. You will notice the outside portions will brown before the middle, so be sure to give it a good mix about half way through!

Let cool and enjoy for up to 4 days in an air tight container

  1. Start by bringing together your oats, roughly chopped almonds, chia seeds, flax seeds, and blueberries. This will be the base of your granola so if you want to add in anything extra, feel free!
  2. In a separate bowl, combine your honey, coconut oil, and natural peanut butter. Microwave on high for about 10-15 seconds until your coconut oil is completely translucent. Mix well to create your bind
  3. Gently pour your honey mixture over your dry ingredients and fold, making sure not to squish your blueberries! Once evenly combined, spread the granola on a parchment lined baking sheet and bake for 10-15 minutes at 350ºF. Give the granola a good stir half way through baking to ensure evenly browning!
