I was never a huge fan of sweet recipes that had anything to do with beans, avocados, or anything that isn’t.. dessert like? Low and behold, when your diet turns into a free for all and you need to find a way back, you’ll do just about anything to satisfy a sweet tooth a healthier way. I love this recipe, whether you follow it exact or sub here and there, it’s a great alternative to a classic treat.

To much of my surprise, black beans work as a substitute for flour in most cakes/cookies. I was really worried that they would have a ‘beany’ taste but I couldn’t taste them at all! I think a lot of people assume that replacing flour means replacing carbohydrates – let me assure you, these are still brownies. They have carbs, they have sugar, but they have a bit more nutrients than box brownies. I wouldn’t recommend eating the entire pan (or do it yolo) but you are getting a bit of fiber and protein as a bonus!

Brownie Time

This is what I like to call a lazy girl’s dessert. I put all of my ingredients into a food process, pour, and bake!

15 oz can of black beans, 3 eggs, 1 tbsp of olive oil, roughly a half cup of brown sugar, 1/4 cup of cocoa powder, 1 tsp baking powder, vanilla extract, and mini chocolate chips

I added the choco chips after I pureed everything together and also sprinkled a bit more on top because who doesn’t love more chocolate? Ingredients that I’ve used in the past such as apple sauce, peanut butter, or even protein powder can all be added in. This is such a versatile recipe that doesn’t need to be perfect to get great results.

Preheat your oven to 375º and bake for about 20 minutes or until your fork comes out clean! You know the drill.
