There is really nothing better than rolling out of bed on Sunday morning, taking the time to enjoy a cup of coffee, and planning a nice big breakfast. Maybe you’re the waffle type, maybe pancakes? Either way, it’s your Sunday morning and the possibilities are endless.

If only every morning could be that relaxing

We all know that when Monday morning rolls around your coffee becomes equivalent to water, and who knows what your grabbing for breakfast as you’re rushing out of the door. Though we can’t go back in time, I thought why not bring a little weekend into our week with these strawberry & honey breakfast muffins. With the fluffiness of pancakes, sweetness of syrup, and heartiness of an egg breakfast – these muffins are the perfect way to start your day!


What You Will Need

  • 1 and 1/2 cup of whole wheat pancake mix {I used this!}
  • 1 scoop or 30g of protein powder
  • 1 cup greek yogurt {I used Siggis}
  • 2 eggs
  • 2 tbsp. of coconut oil
  • 1 tsp. baking soda
  • 1/2 cup of water
  • 1 cup diced strawberries

This recipe is super simple to make. In a large bowl, combine all of your ingredients besides the water and strawberries. As your mixing your ingredients, slowly add in your water making sure not too add too much too quickly. This will help ensure you have a smooth consistency.

Gently fold in your diced strawberries making sure not to over mix

Pour batter into a muffin tin and bake at 350ºF for 20 minutes or until golden on top
