A Very Healthy Valentine’s Day Treat
I love Valentine’s Day. I know it’s cheesy and mushy and a “hallmark holiday,” but I don’t care – I freaking love it. It’s a day to think about love, talk about love, and celebrate those who make you happy. All things that I think more of us should do. There’s just something special about taking a day to appreciate love, and the relationships that we have with one another. As our world becomes more and more technologically involved by the minute, and our face to face connections become far and few, I think we need it now more than ever.
I try really hard to remind myself of this. I often find myself getting caught up in how my life is “supposed” to look or play out because I am constantly looking at how other peoples’ lives look and play out. I love blogging and it has allowed me to connect with people from all around the world, but there is a big part of my heart that often misses the human connection of it all. Moving forward in 2018, I want to bring my blog to life. I want to share my love for nutrition and healthy recipes with my community, in hopes of changing the conversation around nutrition, body image and self love. I want to sit down and talk to people – feel what they are feeling, see what they see, and understand what exactly needs to change. I know its possible because I know love is possible, and I truly think that’s all we need.
My dream is to host fun gatherings and just chat about nutrition, body image, working out, and self acceptance. It isn’t until we are able to discuss our inner thoughts, questions or worries that we are able to change. My goal has always been and will always be to show you how to love the food you’re eating, to love the body you are in, and to love change. What did I tell you? I am just full of mushy-gushy love.
While we’re waiting on me to hit the lotto and host fun nutrition parties, I’ll just focus on the fact that Valentine’s Day is only a few days away, and I wanted to share a simple and healthy cookie recipe that is perfect for your holiday. You don’t have to love Valentine’s Day to love these cookies – skip the heart shaped cutout and they are great for any occasion. This recipe calls for seven simple ingredients that you probably already have in your pantry, can be made in under thirty minutes, and the best part of all – these cookies are grain free, gluten free, and refined sugar free. We love using all natural ingredients every chance we get, especially when it comes to sweets! We hope you love this recipe as much as we do!
Dark Chocolate Shortbread Cut-Out Cookies
What You Will Need
- 1 and 1/4 cup coconut flour
- 1/2 cup cocoa powder
- 1 tsp. baking soda
- 1/4 cup coconut oil, melted
- 1/2 cup maple syrup, or honey
- 1 egg
- 1 tbsp. vanilla extract, or almond
Optional: melted dark chocolate chips, sprinkles
Preheat oven to 350ºF and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the coconut flour, cocoa powder, and baking soda. Using the same bowl, add in the melted coconut oil, maple syrup, egg and tablespoon of vanilla. Mix until well combined.
Coat flat surface with extra cocoa powder, or flour, and carefully roll out the cookie dough. Cut into shapes and place on baking sheet. Bake for 7-10 minutes, remove from heat, and let cool completely before serving.
For toppings, I love melting dark chocolate (70% cacao+) and adding fun Valentine’s sprinkles! If you want to keep this totally refined sugar free, feel free to add in any nuts, seeds, or extra honey for a richer flavor.
